roasted purple majesty* potato chips

*ridiculously delicious potatoes from the horse powered Channing Brothers Farm in Twisp WA

4 medium sized potatoes

2 tbls olive oil

1 tsp salt (try the Real Salt, available at Rocket Market, crazy delicious!)

1/2 tsp pepper

1. Preheat oven to 425.
2. Slice potatoes in ⅛- inch slices.
3. Put potatoes in a large bowl and toss with olive oil, salt, and pepper.
4. Lay flat on baking sheet, being sure not to overlap slices.
5. Roast for 25 mins, or until golden brown
6. Top with salt and pepper
