2 medium sized celery root balls
1/4 bunch flat leaf parsley, minced
2 lemons, juice and zest
3/4 cup mayo/aioli
2 tablespoons dijon mustard
1 tablespoon fresh thyme, minced
1/4 cup parmesan
1 teaspoon salt
1/2 teaspoon white pepper
pinch of nutmeg
pinch of cayenne pepper
- peel and julienne celery root. Add juice of 1/2 lemon, mix well. Add parsley and mix together.
- Make dressing adding the rest of the ingredients and blend in a cuisinart/blender. Add the dressing to the julienned celery root and mix well.
- Check seasoning and add more of what you like!
