1 grapefruit, supremed
1 orange (blood orange are bomb right now), supremed
2 mandarin’s, supremed
2 cups arugula or shredded lacinato kale
1/2 bulb of fennel, thinly sliced
1/4 small red onion, thinly sliced
Juice of 1 lemon
1 tbsp oil (I recommend olive oil but avocado oil is a solid alternative)
1 tsp dijon mustard
1 clove garlic, chopped
1 tbsp sherry vinegar
1/2 cup chopped pistachios
- mix together lemon juice, orange zest, oil, dijon, garlic, and vinegar together in little bowl
- Put greens in bowl, top with fennel, red onion, supremed citrus, and pistachios
- Top with dressing and dig in!
