datequat salad

8 kumquats

1 head of radicchio chopped

3 cups arugula

1/2 cup Italian flat leaf parsley

3 medjool dates pitted and diced

1/4 cup grated parmesan reggiano

3 tbsp fresh squeezed lemon juice

4 tbsp extra virgin olive oil

salt & pepper to taste

 

  1. slice kumquats thin to make little rounds of kumquat (make sure to de-seed as you go!)
  2. put radicchio, arugula, parsley, dates, kumquats in a bowl
  3. whisk together lemon juice and olive oil and season with salt and pepper to taste
  4. top salad with lemon juice and olive oil mixture and parmesan reggiano
