spring mix – handful

1/2 head living butter lettuce

1 package (2 oz.) micro greens – local full bushel farms

1 apple thinly sliced – pacific rose

1/2 bulb thinly sliced fennel

1 bell pepper thinly sliced – red, yellow or orange

grated parrano cheese

dressing:

juice of 1 lemon

zest of lemon

2 tbsp olive oil

1 clove garlic, fine chop

salt & pepper

  1. combine garlic, lemon, lemon zest, salt & pepper in a small bowl and mix together
  2. put spring mix, micro greens, apples, peppers and fennel in a big salad bowl
  3. add salad dressing as desired and top with Parrano cheese
