rocket creamy broccoli soup

2 carrots – small chop

2 small onions – small chop

1 stalk celery – small chop

3 tbsp fresh thyme or 2 tsp dried thyme

8 cloves fresh garlic or 2 tsp garlic powder

1 tbsp salt

2 tsp black pepper

2 tbsp olive oil

1 large bunch of broccoli – chopped

4 cups broth (frontier veggie stock is bomb)

2 cups heavy whipping cream or sub coconut milk to go vegan!

1/2 cup of grated parmesan or leave out to go vegan!

  1. Chop all veggies
  2. Saute carrots, onions, celery, thyme, garlic, salt, pepper, and olive oil until veggies are tender and lightly caramelized.
  3. Add broccoli and broth. Simmer for 1 hour.
  4. Add heavy whipping cream and parmesan.
  5. Blend with a hand blender or blend small batches in blender.
