1 pint heirloom cherry tomatoes, cut in half*
1/2 jalapeno (a whole if you like spicy), diced
1/4 red onion*, diced
1 clove garlic, chopped
2 tbsp cilantro*, chopped
1/2 tsp chipotle
juice of 1 lime*
salt and pepper to taste
(add some mango* if you are feeling fancy or sub 2 avocados* for the tomatoes and make some bomb guac.. everyone loves guac..)
- chop tomatoes and put them in a large bowl, salt and pepper them and stir well
- add lime juice
- add onion, garlic, cilantro, and chipotle. stir well.
- add salt and pepper as needed
the longer the salsa sits the more delicious it becomes. it allows the flavors to marry. best to make the salsa the night before or morning of the day you will be eating it! (soup is the same way… just fyi)
put on top of nachos! we’ve got our late july tortilla chips and organic rumiano shred pepper jack OR make VEGAN nachos with daiya vegan jalapeño havarti! what??? yeah.
