citrus party and fennel salad

 

1 grapefruit, supremed

1 orange (blood orange are bomb right now), supremed

2 mandarin’s, supremed

2 cups arugula or shredded lacinato kale

1/2 bulb of fennel, thinly sliced

1/4 small red onion, thinly sliced

Juice of 1 lemon

1 tbsp oil (I recommend olive oil but avocado oil is a solid alternative)

1 tsp dijon mustard

1 clove garlic, chopped

1 tbsp sherry vinegar

1/2 cup chopped pistachios

  1. mix together lemon juice, orange zest, oil, dijon, garlic, and vinegar together in little bowl
  2. Put greens in bowl, top with fennel, red onion, supremed citrus, and pistachios
  3. Top with dressing and dig in!
