cucumber+melon salad/salsa

 

 

 

 

 

 

 

 

 

 

 

3 cups cubed melon (honeydew, hami melon, watermelon – whatever you like!)

2 cups cubed cucumber (seeded)

2 tbsp fresh squeezed lemon or lime juice (whichever you prefer!)

zest of whichever citrus you chose

1 1/2 tbsp chopped fresh mint

1 ounce of crumbled feta

1/2 tsp mild chili powder or use 1 serrano pepper diced if you like a little heat!

Combine all ingredients in a large bowl and mix

*this can be either a salad or chop it up smaller and call it salsa! if you make it as a salsa it is delicious over a bed of rice or quinoa!
